they are both very similar. but the main advantages of each board are:

Asrock N68C-S UCC:
- PCIe x1 slot will not be blocked by double slot graphics card (most decent graphics cards are double slot these days)
- cheaper on overclockers (may not be so elsewhere)

Asus M4N68T-M LE V2:
- its the only one of the two that supports 125W processors, like the Phenom II X4 955 BE

depends on what you think will be most useful to you.

Do you mean double slot graphics cards or dual graphics cards?

Both of the motherboards you listed support a double slot graphics card.

if your going for the 955BE then the asus is the one your going to have to go for.
it will support dual slot graphics cards, but the dual slot graphics card will cover the only PCIe X1 slot, whereas on the other board it covers a PCI slot.

this shouldnt be too much of a problem, because a large number of expansion cards are made in both PCI and PCIe x1 versions
 
The Asrock doesn't support 125W processors so that's out of the window.

The Asus will fit a dual slot graphics card. It will keave you with 2 PCI slots for anything further you wish to add.

The Asus? Yes, as long as you don't have need for any more PCI-E slots as there will only be 2 PCI slots left.

You did you note that the Asrock doesn't support your processor so it would have to be the Asus?

This Gigabyte board would leave a PCI slot and a PCI-E x1 slot free if that's any use:

Just ordered the asus and the Graphics on the pci ex x16, the sound card and the TV card on the pci's and still need to work out what I'll put on the pci ex x1

You won't be putting anything in the PCI-E x1 slot.

As explained earlier in this thread the graphics card will overhang and block that slot.

You must have bought the 5770 cheap if you've not spent more than £190.
