I guess it will be Linux based, but which distro? Unit also has 16Gb of RAM.

Ideally would like one that "looks" like Windows and functions as close as it can. As I'm just not ofay with Linux and it CLI stuffs ;)

Really depends on what the server is doing?

Mint is probably the closest to windows but its not really a server OS.

personally I'd stick on Centos, Gnome is pretty intuitive and self explanatory.

Edit - How about ESXi?

Server 2008 R2 Datacenter supports up to 64 physical processors (or "sockets" in Microsoft's preferred terminology). If you're talking about a single Opteron processor with 16 cores then the Standard edition will be fine. Even Windows 7 supports up to 32 cores (or 256 cores for 64bit versions). Armed with this knowledge, there's no need to become au fait with Linux ;)

That IS a good question, and not easy to answer as I'm not really sure.

I guess if anything it would be used for rendering or video processing, not really for web server(ing).

Then you will find out what systems your video render supports I know 3dsmax for example will only work in windows machines.

Centos is likely the one you want as its a good base O/S
