Which Processor for new build?

The launch of Skylake, which with all the hype should have been cut & dried, has turned into a confusing mess leaving me no knowing which way to go for a new build.

The old PC is Q6600 so there's no question of it not being thoroughly outperformed what ever I choose.

Here are the choices:

5820K
6700K

Or the wild card

Xeon E5 2690 V3 2.4GHz ES 12Core

This would be a 'used' version guaranteed of course but the reviews for gaming show it's at least as good as a 5960X

The PC is on for around 12 hours a day so power is a factor in choice.

It will be used for image processing with large files open in Photoshop. Also gaming and potentially as a small server for multimedia.

In addition it has to stand the test of time. The Q6600 is getting on for 10 years old now and although it is getting slow most applications still run.
 
I can understand the 5820K, but what's wrong with the Xeon, which appears to outperform the 5820K and has lower power requirements too?
