or an old 980/990x that i can pick up of fleabay for dirt cheap.

Or a dirt cheap AMD bulldozer or phenom just for the savings
 
Im going to use my rig mainly on gaming and overclocking, i normally have a tight budget hence going for 3 sandybridges in the past year, but now i have a bit more money so i thought id ask which option i should go with
 
If you've had sandybridge previously then you definately don't want AMD as it's a backward step.

Forget about the LGA 1366 Core i7, as they are old tech now. As good as they still are LG1366 is a dead socket.

The two LGA2011 sku's that you've listed are both excelltn, plus you should have another upgrade option when IB-E (potentially) comes at the end of next year.

If you're more budget sensitive then go for the 3570K, but weigh it up against the cost of the 3820 and make your decision. The better the board you go for the narrower the gap in price will be. If you want a budget board then it will force you down the 3570K route. If you want a quality board then the price difference will end up being around 60 quid which easily justifies more threads, more PCI-E lanes and everything else that X79 offers.

If money just isn't an issue then go for the 3930K and don't look back - it's a beast.
