So what system would be better? Its will be primarily used for Flight Sim 2004 and then the new one, Flight Sim X.

Hmm, neither. Wouldn't bother with SLI as it's a waste of money, just get one wicked card. I'm sure everyone will suggest an X1900XT, it's better than the 7800GTX and it's roughly the same price, the Sapphire one looks very good for the money. Also wouldn't bother with the SD 4000+, go with the 3700+ as it's only 200 MHz slower and about £70 cheaper.
