Which temp to go by?

I use everest to monitor temperatures on my quad and wondered which temp its best to go by.
Should I be looking at the individual core temperatures or the temp that just says CPU?

Core temps, and get Intel TAT

I had intel TAT but couldnt get it to with with Vista x64.

What about coretemp? Is that rated highly?

I like Coretemp but I don't know if it works with Vista64.

You need to disable driver signing to use it on Vista 64.
