Which way to upgrade

Hey guys, I've been out of the PC building loop for a while, but my system is beginning to look a little long in the tooth, so I'm beginning to spec myself something new and shiny, with the bits probably being bought throughout January.

My current specs are:
Phenom 2 X6 1055T Running at 3.5Ghz
OcUK H2Flo liquid loop CPU cooler
Gigabyte 890GPA - UD3H motherboard
VTX 6870 X2 2Gb GPU
OCZ Stealth Xstream2 700W PSU
8Gb Geil Ripjaw 1333Mhz DDR3 ram

I mostly game on my pc (I have two monitors, though don't do anything like eyefinity), though I also render youtube videos though this is done on the GPU, so the CPU isn't going to be as much of a factor for that.

While I would like to get an AMD cpu, it isn't so much that I would cut my nose off to spite my face, and if intel clearly provide the best option then it makes sense to grab one of those.
I would probably keep my current PSU and GPU for the moment, just grabbing a new mobo and CPU, and potentially RAM if needed, but the whole triple channel thing was just a fad that went away, wasn't it?

Looking at intel's offerings, I assume I would be after an i7 4820K as this seems to have great performance with good overclocking opportunities? And the AMD alternative to this would be the Piledriver FX-8 9590? This comes clocked much higher (1ghz), and while it is more 8 core than the i7, does this matter? And how do these both overclock?
