Which wiki?

For my business I'd like to be able to upload business standards & guidelines (public) and tests/business processes (private) to the web, so as it can be reached from anywhere around the world. I'm disorganised at times and one central location would be perfect.

I'm looking for a wiki that's preferably php/ruby and as familiar to use as media wiki (the big one we're all know), but has some extra security permissions so I'm able to hide pages that you don't want everyone in the world to see (this doesn't come as standard with Media Wiki).

www.opensourcecms.com

check that out.

I installed a media wiki server in the company, and you are right you can't do that really OOTB, but it does go against the whole 'wiki' culture.. You can do what you are talking about on it though, just needs a bit of configuration, and it may be worth it as mediawiki obviously is the big one and is well known by many people. (how many different users will be editing / using this?)

So probably you are looking for something more like CMS related rather than a wiki. I was checking out confluence earlier, seems quite interesting.
