Why do I see 16+k resolution when I thought 8k was max

According to a video I watching from a game dev a couple of years back, the human eye can't determine anything higher than 8k, yet I see 16k is on the way. Can you clear this up?
 
Depends on the distance viewed from really.

There are some applications for thattsort of thing too. It has been suggested that at a football match, you put a fixed 8k(or 16k) camera on the half way line in the normal place and with that single camera footage , you could make a moving crop 1080p signal from it for normal TV. Then that way the selected areas moves around like a normal camera would , but you would also have the whole pitch covered which could be selected differently for replays and off the ball incidents.


So it's not just about whether an end use 16k display.
