Why the subtitles?

I have ripped DVD's using DVDShrink and everything is great, except. When I transfer the VOB files on to a memory stick to play via the USB port on my DVD player English for the hearing impaired appears..
I have ripped the main movie only and when I play the same film (ripped) on MPC-HC there aren't subtitles. Any reasons for this to happen on the same VOB files played on different mediums?
 
Different players do seem to have different defaults when it comes to displaying subs.

You know you can deselect subs anyway in DVD Shrink right?
 
Yes I did deselect them assuming that they are "English - Normal Captions", but they still appeared on my DVD player via USB. Although I can deselect them using the remote I couldnt understand why I got them in the first place.
Another question I would like to ask it on DTS discs. Do people who keep the file size to a minimum still select to have a menu and the option of 5.1 & DTS or just go straight into the movie with only one selected ie. DTS
