Wi-Fi Calling - Why so cagey?

I'm currently with EE and my contract is about to end.
I want to move to a SIM-only deal, however see that EE offer nothing (with any data above 3GB) that is less than 24 months. I won't sign up for that, I don't like getting two price increases over the time of my contract.

Wi-Fi calling is essential to me. I live in a little area where coverage is terrible.
EE has been fine and it seems that no mater what phone you own, you just switch on Wi-Fi calling and off you go.
Vodafone were also OK for this before I moved to EE. You did have to log into your Vodafone account and enable the feature, and wait for OTA updates etc, but generally it worked.
If I go to Vodafone's website, under supported devices they have a generally up to date list and I can see the Galaxy S20 is supported, I'm making the assumption my Galaxy S21 will also be.

O2 / Sky Mobile just seems a complete disaster zone. They list no Galaxy S series past the S8 in the compatibility list. They say "some phones require Sky firmware" yet refuse to say which. They will not tell you about any phone "not on their list" instead saying "To find out if your device is compatible - switch on the feature and see!" (I'm paraphrasing, but that is exactly what they are saying).

Three do mention the S10 range, but even they aren't "confirming" that anything newer will just work nor saying that you wont' have to own a device running their firmware.

So, just to the community at large.
If you've got a non-network device and want to be able to use Wi-Fi calling with the minimal amount of fuss - am I best sticking with EE and potentially Vodafone?
Or are O2/Sky, Three etc just not updating things?
I've always assumed that with newer devices, features like this will "just work" but the more I'm reading it looks like networks will not commit and some still want to force you to buy a device from them to use the feature.
 
three wifi calling worked fine for me on s10 and mi 9, also on Sky, interestingly my s10 did not work on smarty when my mi9 did but I think that was in the early stages when smarty were just rolling it out, which is weird because both worked on three around the same time and the expectation is these networks are the same.
 
Also using WiFi calling on three with a Pixel 4 XL. Agree it's definitely an essential feature that I wouldn't want to be without.
 
I'm still unsure - Sky just refuse point blank to say "Yes, purchased from Samsung S21 will work with Wi-Fi calling on our network" instead saying "Here is how you would set it up - try it".
Every other network seems quite happy to confirm all will be well.
I think there is a cooling off period, so maybe I'll go Sky and just cancel the SIM-Only if it doesn't work.
