Will I see a good improvement.

Yes, you should see a great improvement in performance, generally and especially in games.

1 x 7800GTX is faster than 2 x 6800GT.

Not sure what your monitor is capable of res wise but I recently went from a 6800GT256 @ 1920x1200 to a 7800GTX512 @ 1920x1200 and the only difference I really noticed was that in some games the GTX512 would allow slightly smoother gameplay but not by much as you have to keep vsync on to avoid tearing which is very noticeable on a 24" TFT. This was also an upgrade for me to a PCI-E mobo from AGP yet still not a huge performance leap forward gfx speed wise that was noticeable in games.

Wished I had not bothered upgrading as not night & day difference and certainly not worth the £900 it cost me for a new mobo, ram + gfx card (although after selling my old parts only cost £450).

If you play around with the Nvidia settings quite possible to get very smooth FPS on a 6800GT still as long as you do not want to enable AA and turn down AF. Depends a lot on the game engine though as HL2 runs great with full detail + AA +AF on a 6800GT @ 1920x1200.

7800GT will be a bit quicker but not sure it is worth the cost to upgrade your CPU/mobo. The CPU you already have is enough to keep up with almost all games on the market right now.

Faster CPU is only really of much use when you have a SLI/Xfire system. Any 2-3 year old CPU will do a reasonable job with current gfx cards. A lot depends on what res you game @. If 1024x768 or 1280x1024 then what you already have with a 7800GT/GTX or X1800 will do for another year easily.

I'm guessing your current mobo is AGP. If so an AGP 7800GS will do you for a while although you will still have to upgrade @ some time to PCI-E + DDR2.

AMD & Intel both have much quicker CPUs due Q2/Q3 so best to wait before any CPU upgrades as this always lowers prices for existing technology.

I would guess you would see a larger improvement if you are using high res such as 1600x1200 or 1920x1600

I just got my new dell 2405fpw and atm cause i havent got my new base unit im running it on my laptop as a secondary monitor thats running a 64mb radeon 9000 mobility and im jumping from that to a x1900xt :D
 
I recently went from a Skt754 A64@2450Mhz and unlocked 6800NU to a Skt939 3700+ at stock (for now) and a 7800GT and the difference is bigger than I thought, games run much better, especially AA/AF performance.

Also this CPU at 2200Mhz is already faster than my old one at 2450Mhz and I am aiming for 2800Mhz - 3000Mhz as an overclock.

So the difference in your case will also be nice, especially with a Opty 170
