Will my CPU bottleneck my 5850

Yeah, though some games rely more on the GPU than the CPU. For example, I can play CoD4 on max settings because I have a good enough graphics card, but World of Warcraft which has worse graphics lags like hell because my CPU is old (Athlon 64 4000 single core cpu), despite having a good enough graphics card.
 
Most likely it will be a bottleneck in most of your games, there are some that will be fine with a strong GPU as mentioned above call of duty 4

The main reason
-Its an old architecture (AMD have gone through Phenom I and Phenom II since as well as the new athlon II)
-It would be different if you had a recent Intel Dual core @ 3GHZ
 
Yes it will, my cpu was bottlenecking my 4870x2 like mad until I overclocked it and even now some GPU intensive games (Crysis!) or benchmarks will bottleneck it.

A brand new i7 920 is about 2-3x faster than your Athlon in raw terms. In real terms at 1680x1080 or bigger res you'll see that bottleneck for sure, probably a 20fps boost at least just by going to a stock i7/i5.
