Scenario;

Fresh install of Windows 10 Anniversary.

Windows has found drivers and successfully installed all hardware.

Only driver I have manually updated is the GPU.

Question;

Is this acceptable/will it give my laptop best performance or would you still locate and install drivers for other hardware such as the chipset, sound etc?

It's acceptable. I've done the same for many years. Seek out the latest version of a driver from the hardware manufacturer if you experience an issue.

Only one I typically manually do now is GPU in many instances I've found Windows automatically installing more stable drivers for chipset etc than the vendor provides.

It all rather depends. Sometimes the Windows drivers will lose some functionality or sometimes not work at all well. EG, wifi drivers keeping dropping the connection. I use a mix of both MS and manufacturer provided drivers.
