I have Windows 7 on my computer but my new laptop has Windows 10 Pro installed and only has Windows 10 drivers on their website so basically I'm stuck with W10 so I will be using Classic Shell to change the layout to look like W7 but is there a way to disable automatic updates on W10?

Luckily you have Win 10 Pro, so it's relatively easy using group policy editor (type "gpedit.msc" at the start menu).

Go tp Computer Configuration > Administrative Templates > Windows Components > Windows Update and double-click "Configure Automatic Updates" in the right-hand pane. The options you see should be self-explanatory.

If you had Win 10 Home AFAIK all you can really do is disable the Windows Update service altogether, re-enabling it temporarily every so often to force a manual update (say after each Patch Tuesday), which is less than ideal.
If I choose the option disabled, it will stop all updates including drivers?

I have configured these two policies to prevent automatic updates,

Computer Configuration > Administrative Templates > Windows Components > Windows Update > Configure Automatic Updates > Notify for download and notify for install

Computer Configuration > Administrative Templates > Windows Components > Windows Update > Do not include drivers with Windows Updates > Enable

That should be it or am I missing some?
