I'm really confused by all the different version available. Can anyone just point me in the right direction, please. What is the most stable version right now?

Just get the RC1 download and you're set. Generally all the w7 builds over the past few months are rock solid.

Unfortunately, there isn't going to be an exact answer to your question since it will vary from person to person. In my opinion, your best bet would be to use the Release Candidate build which was officially released from Microsoft which is build 7100.

You can get the Windows 7 Release Candidate build 7100 by following this page here. Just scroll to the bottom and you will see "Download 32-bit version" and "Download 64-bit version", click on "Select language" on your desired version and click "Go".

Well I've got 7100 and 7264 already. Just not sure what the benefits of 7264 would be over 7100. Burning them right now, so if someone could enlighten me before I start to install one of them that would be great ;) So far the consensus seems to be to go with 7100.

Well none of the beta/rc keys work with 7264 so you have to use rearm, 7232 is probably the pick of the bunch and comes in 32/64 flavours.....it fixed a couple of niggling problems with 7100 that i had and i have no complaints using this until retail.

retrograde step using 7100 would sugggest 7232 64bit or 7260 32bit
google this for 7232:
Windows 7 Ultimate x64 build 7232 by SoLoR
for 7260:
Microsoft Windows 7 Build 7260 (32-Bit) ISO-file!! (SoLoR)

In the next couple of weeks the build will be completed for "Final" testing!

There is official RC1.
There is the downloading of stuff which may or may not be laced with viruses and trojans.

Stick with RC1 until MS announce something newer.
