Windows 7 workgroup & sharing folders

I have some computers networked using a workgroup on Windows 7. One computer is used as a 'file sever', so that all computers connected can access the shared files.

However, there are some documents that I would like to protect with a username and password, or grant access to only some of the connected computers. How do I protect specific folders?
 
Does everyone who user the PC's on the network have their own username? If so could you not use the security tab in folder properties to grant access to certain people?

Other than that, I would probably use compress the files with WinZip/WinRAR and add password protection.
