Does windows 7 get any benefit from having hyper threading technology? increasing the number of cores from 4 to 8 or does it just support quad core and no virtual cores.

Windows can support virtual cores. Otherwise there would be no point in buying a CPU with HT.

Windows 7 doesn't get any benefits from moving from 1 core to 2 cores. Rather it's the software you use if it can take advantage of the extra core.

I'd have thought that the OS generally benefits from having more cores available to multi task?

Well if you leave the PC on idle only thing that would be running is the OS itself isn't it? And CPU load levels would only be around 0-1% odd. I suppose more cores does help but Windows itself only runs about 40 processes which doesn't even use that much CPU power.

But not many games take advantage of more than 4 cores.

Windows likes to crunch numbers every now and then. I assume for some particular benefit unknown to us. XP was more susceptible to this perhaps, "System" using a large portion of CPU time wasn't too uncommon.
