Windows 8 or Windows 8 Pro

Hi.

Is there really any beneficial difference between 8 & 8 Pro apart from Remote Desktop?

Windows 8 is quite a bit cheaper so considering that to save a bit of money.

Also they don't limit how often it can be installed do they? Or if I uninstalled it on one PC and installed on another is that ok?

The rule of thumb is if you have to ask, you probably don't need Pro.

That said, it's a good idea to check out a comparison list before you commit the cash. I think bitlocker is worth the difference alone, but that's certainly not true for everyone.
