Newer operating systems, i.e. 8 or 10 might be a touch faster in some instances. Pro just gives you access to more business features in Windows, things like usage rights, accessing domains, encryption. Wiki will outline the key differences.
 
The Professional edition of Windows 7 mainly adds features that are useful in a corporate environment (such as XP mode and remote admin).

The only real performance difference is an increase in max RAM from 16Gb to 192Gb, which for most people won't be an issue. If you do a free upgrade to Windows 10 Home then this limit gets upped to 128Gb.
