Windows sound reverts to 2.0

Hello, I run a Intel NUC5i3RYK (Intel Core i3-5010U 2.1 GHz, Intel HD Graphics 5500) as a HTPC. It is connected to a SC 2024 AV amp. This amp has numerous inputs, such as PS4, Sky Q, Fire TV etc.

The NUC is running Windows 10, it fully up to date and I'm using the in built HD audio and use Plex mostly as the client.

More often than not when I switch back to the NUC source from one of the others, no matter what I had the sound configuration on before, it always switches back to 2.0 - any ideas why? This is highly annoying.
 
I had this issue in win7 and it persisted when I migrated to win10 - much to my chagrin - It seems to have retained it's sound setting ever since I completely uninstalled nvida drivers (there's a nvidia driver uninstaller out there to get rid of everything) as sound to the Amp is controlled by the HD audio nvidia driver.

Not sure that helps in your setup but perhaps remove all sound drivers entirely and reinstall?
 
have you ruled out the amp, by connecting directly to tv say (sending it 5.1), when the nuc hdmi out is reselected doesn't it
regenotiate the resolution and sound format (the screen format is controlled by edid from the amp - I do not know about sound though)
so maybe amp is the problem (even if it works on othe sources)
