I want the text box visible so the user can type into it, but when they print i want only their text to print and not the outline of the text box

im obviously not wording my google searches right because i keep getting methods to stop the text printing...

A couple of options you could try...

1) Enable Show text boundaries - from Word Options click Advanced and it's under 'Show Document Content'. If you distributing the document then the receiving user would also need to turn this on.

2) Use a table. You can set it to have no borders and then enable View Gridlines in the Layout tab. This will show a dotted outline around the field which won't print.
