Needed to upgrade from 3900X/64Gb RAM/1070 workstation/gaming PC.

Requirements:
12 cores, could have gone for 16 but for my Hyper-V applications scaling over 12 cores isn't great. Wanted to go 7950X3D but that wait time killed it for me. Since AM5 is pretty future-proof I have time to wait for a generation or two.
128GB ram
Super silent with no fan ramp-up. Sometimes I think it's not the noise but the change in RPM that bugs me
NVME only storage
4K 120Hz gaming potential
Small and good looking.

Two weeks later the parts arrived:

The 7900 non X was a fantastic choice. A negative 30 in PBO lowered the temps even more and boosted performance. With the other improvement my work/compile times halved.
128GB DDR5 Ram. Stable at 4600, very quick boot times. 4800 doesn't finish memory training. Sometimes my application eats 80Gb RAM. Got 2 64Gb kits from Kingstom 5600Mhz.
Asus X670E-F. The reason I didn't go for X670E-E was the weird PCI-E split and the extra lights which would go against my clean look. Had debug code in the past and never used it. Built in wifi saturates my 50MB fibre connection.
14Tb SN850X NVME, 2TB boot and 3x4TB. 3GB/s copy between drives.
NZXT Z53 Push-Pull. With just two fans temps would go in the 70s and I needed to raise the RRM. Adding the stock NZXT fans as pull at the back with the Lian Li ones in the front lowered the temps significantly. 40s at idle and 61 max after 10 min of cinebench. All fans including chasis at 700RPM fixed. It barely whisperers Really happy here.
Strix 4090 just because it complemented the build look wise IMO. Lots of coil whine at over 200 FPS, VSync fixes that and for less demanding games I set a 70% power target anyway for those. Max OC is 2985MHz.
Asus Thor II 1000W Platinum.
Lian Li O11 Air Mini with 10 120SL inf fans

4K 120Hz gaming with ease, temps never go above low 60s even with OC on the GPU.
