Looking at getting:
-Gigabyte Z68AP-D3 Intel Z68 (Socket 1155) DDR3 Motherboard
-Corsair Vengeance Blue 8GB (2x4GB) DDR3 PC3-12800C9 1600MHz Dual Channel Kit

I have 4x1GB Nanya NT1GT64U88D0BY-AD 1GB @800Mhz sticks spare from my current pc, would I be-able to stick a few in for extra 'oomph', or not?

They're DDR2 so wouldn't work, or even fit, in that motherboard.
