Would I be able to run Minecraft at at least 720p with decent setting using either the Intel HD 2000 or 3000 (Depending on whether I get an i5 or i7)?

I'm thinking about buying my build now minus the graphics card so that I can afford an i5 or i7 with a better mobo and then buy the gpu later (maybe around halloween time).

Minecraft seems to be one of the worst games for the Intel HD2000,HD3000 and HD4000 IGPs:

If you want to use an IGP for gaming,either Llano or the Trinity CPUs which are being released in the next month or two are your only realistic choice.
 
The only one that seems to be in any way playable is the HD4000 graphics. Luckily, that's what the i5-3570K has, and you said you plan to go for the i5 or i7. :) The 3570K is a fully unlocked chip, so you can overclock it nicely too.

EDIT: Don't forget that that Anandtech benchmark was pushing 1920x1200 resolution on maxed out settings and still got 25fps. If you're running a 1080p monitor and turn down some of the settings, it should run fine (certainly well enough to keep you going until you can get a graphics card).

Will the piledriver / trinity cpus have better igpus in them compared to the intel ones?

Or would the worse performance of the cpu make it a moot point.

The CPU section of a Core i5 is much faster,so is a better choice with a discrete graphics card IMHO.

The AMD CPUs are more Core i3 competitors though. Here is a review of ES samples of the latest Trinity CPUs:

The A10 IGP looks to be at least as fast as a GT440 or HD5570 GDDR3 or even faster. There are no HD4000 benchmarks but I expect the A10 to be comfortably ahead especially when you turn the settings up.

So for CPU performance go for the Core i5,but for IGP performance Llano or Trinity will be better.

You can improve performance by installing optimine and java 7. Even my 1.3GHz core 2 laptop with gma4500mhd runs mc comfortably with low draw distance.
 
How about buy the i5-3570K, and then a cheap GPU like a 6570? Then once you get a proper GPU, keep the 6570 for something like a backup card or a HTPC?
