if i bought this ram thats on offer (ddr3 triple channel)
OCZ Gold 6GB DDR3 2000MHz PC3-16000C10 Low-Voltage Triple Channel Kit (3 X 2GB) (OCZ3G2000LV6GK)

and only used 2 sticks for now in my maximus extreme X38 mobo, would it work?

so in effect i am using triple channel ram in a dual channel mobo (2x sticks not 3x sticks)

the method in my madness is i will upgrade to I7 later
 
Definitely okay, as triple channel memory is simply three normal modules that are known to work together, so two will work fine. However with DDR3 prices dropping all the time it may well be worth getting 4GB now and a complete new 6GB kit when you come to upgrade. That also leaves the old machine with memory.
