So which to get?

I Use my PC mainly for Films (Ripping, burning), Games @ 1080p, Watching 1080p stuff, Music etc.

I will be using my trusty old 6870 until the new 8000/GTX700 series are released!

Is the extra wonga worth it for X79? Will IB-E ever be released for X79?

IB-E will be released but probably wont be a huge step up and by that time we will have haswell anyway.

It depends really on if you want something to keep or if your thinking of buying something you will upgrade. Based on your current spec in your sig I imagine youll buy this and stick with it for at least a couple of years in which case id save the cash and get a z77 and clock the 3570 up to silly speeds I would however be tempted to get a better z77 board like the sabertooth or ud5, the ud5 on two is a bargain

the one gaming advantage that X79 might have over Z77 would be extra PCIe lanes, but unless you are thinking of a tri-sli/quad-sli setup at some point then a decent Z77 board should do you fine
