x99 Build - NAS and Workstation

I'm thinking of building an X99 system.
I want it to share files and transcode plex to one TV.
I use Adobe Creative suite software illustrator/photoshop mostly and some video editing/encoding.
I don't need an OS SSD (I have a 240GB drive)
I don't need a monitor
I don't need storage I have 4 3TB drives.
I don't need a GPU (for Now)
I want best bang for buck.

I'm after a case (full tower-with Blue ray/dvd writer)
OS (win 10 home)
Mobo
CPU
PSU
Cooler (prefer air)
KB/Mouse

I'm thinking 32Gb memory (with 128GB max) (I have VMs/video editing/AdobeCS requirements)
I want the best price possible, I was thinking between £800/1000 the nearer £800 the better.

Have I missed anything?
Any advice
Any help spec-ing this is appreciated greatly

I'd pay the extra to go modular
Looks tidy even if at the higher end

Anyone have any ideas on the best software approach for a NAS/Workstation, esxi/proxmox or just let windows handle it all?

Would I need some headroom on the PSU if I wanted a 1080/AMD GPU at a later date?

Prices of devils Canyon i5 and i7 havent changed since Skylake came out many months ago now.
