so I have been offered an full X99 platform with 16gb of ram and an 6 core 5820K for around £350.

I was waiting for Zen2 around May to upgrade my X58 platform (X5650 six core at 4.4Ghz and 12gb or ram).

I am currently missing out on DDR4, SATA 3,PCIe 3, NVMe and shocking driver support.

Yes my system is still ok but driver support for stuff like RAID is starting to be an issue.

On paper it looks like at 30% performance. However I whould probably flip the 6core for an 8 core for more performance.

edit:

I watercool and have a GTX1080 and might go SLI as secondhand cards are pushing to £300

I think it still holds up pretty well. It depends what you're doing, an overclocked 5820k should equal and possibly even pull ahead of the Ryzen in some games. But I think £350 is too much, unless it's an Asus Rampage V Extreme or something. £250-300 max would be the sweet spot for that imo.

It’s a Gigabyte X99-ultra gaming and comes with a EK water block.

I’m in no rush to upgrade, and the Zen2 leaks look amazing! So want to wait till Jan to see if they are announced.

I’d much rather go B450/Ryzen 2700 for the money.

More cores, similar single thread performance, much more power efficient. Along with all the benefits of a newer platform.

Replacing the 5820k will be expensive too, 8 cores don’t come up often.

Even with the waterblock that it sounds like you would use it is still overpriced . It's not a bad system but as others have said you can get newer, more than comparable tech for the same money.
