I'm not sure what is meant by maintenance as it seems to be too quick for defragging, but there is an option with the xbox live update for HD maintenance. If you go into the memory section, press Y when the HD is highlighted, then press X X LB RB XX.

This has been mentioned a few times, it delete all your local game updates and achievements. The achievements are downloaded again next time you connect to live, the patches when you next run the particular game.
It's only there for the support peeps to fix a potentially b0rked patch and it's totally different to the cache clearing that things like Oblivion do.
