Agree with above poster, might not be worth buying both GRAWs, maybe the first one for single player as the second one focuses more on the multi. Also the same for oblivion, can be picked up for even cheaper on the pc which i beleive is the superior version.
For racing it's forza, grid and pgr4 depending on what you prefer, as you said i think forza may be a bit too deep for what you want.
And for some variety there's kameo for dirt cheap platformer, DOA4 for titilating beat em up action and ninja gaiden2 for pure action game. There is also CnC3 if you'd think of trying an rts on the xbox, i havent tried it myself yet but it apparently well done.
