Looking for a 1GB card for the f31fd, from what I have read on the fuji site both type M and H will work in the camera with the only difference being the encoding method. If this is the case why have they made two types that do the same thing and why would I choose one over the other. The only apparent reason I could see is the slight difference in price?

Do the M and H not correspond to the make, one Olympus and the other Fuji? The Olympus cameras unlock certain features in Olympus cards, I don't know if it is the same for the Fuji cards.

Type H are faster but whether it makes any difference depends on your camera, I don't think it does on the f series but if you want a difinitive answer ask on the dpreview forums. I just got a type H for my 6500 and it is certainly quicker writing raw files than my original spec XD card. It may make a difference if you use a card reader to transfer to the pc but this isn't really that important.
