I have 3 different XDA phones which I will probably sell at some point. However all have been flashed to use home brew ROMs. Would they be more sellable if i flashed them back to original O2 ROMs (albeit unlocked) or left as is?

Leave thme with the custom roms, just remember to advertise the features the newer roms provide.

I've sold three XDAs over the years using this mentality and it's never hindered any sales.
