Yeah, they are supposed to be of a better yield, plus the server boards are mission-critical and are designed to run 24/7 without stability problems arising.
Performance wise there is no difference. The xeons are just designed for absolute maximum stability and lifetime in a 24/7 environment. I wouldn't personally spend the extra money on one just for a workstation. The stability of normal c2d's is fantastic as it is so your not going to be having any downtime due to failures. Obviously though, it's either opteron or xeon if you want multi cpu.
