I currently have this card and im thinking of going Eyefinity, would this card be able to cope with 3 screens at high settings (no AA and basic filtering)

3 x 22inch Screens @ 1920x1080
 
It depends on what type of games you're talking about.

In less demanding games it wouldn't be too bad.

In some of the more demanding games you could well be looking at a slideshow.
