Just upgraded a computer and want to put the OEM version of XP back on it, but obviously need to contact MS and explain that I've changed the mobo so that I can get a new serial number. Where can I find their contact details/the number I need?

If you just install it as usual and when it comes to activate it, Use the phone activation and all the steps will be there.

Edit: Its not guaranteed this will work though as, legally, the license is tied to the motherboard. Usually it works fine though.

So I went to activate windows today and chose the 'over the phone' option expecting to have to explain the situation to a representative - I keyed in the number that it asked me for (the massively long registration number that gets generated on your pc before-hand, when you put your windows SN into the activation box prompt), and then the robot voice lady gave me a massively long activation key which resulted in the end of the call. I put the activation key I was given in and it activated the copy of windows no problems what so ever, despite this copy having been previously used.

Now, it was last used 6 years ago, so is there some kind of automatic reset/redeem after a certain period of time that allows you to use it again? (as once X number of years have passed it's pretty obvious you're not trying to install it on every computer in sight?)

Yeah if the key hasn't been activated for a while it often works just using the online system, or worst case using the automated one like you did.

As you have found out the copy of windows you had activated just fine when you changed the motherboard and it will continue to do this just fine if you change something else.

MS really don't care if you use an OEM copy of windows again with different components and what's even better is that you also found out that MS didn't bust in through your window with the SAS because you reused your OEM copy, as many "serious business" people on here would have you believe.

but surely it's not a case of 'they don't want you to' and more a case of it won't physically work if the copy is already in use/been used recently.

What's the deal with Windows 7 OEM ? If you upgrade the motherboard is there anything inside that prevents registration again ? I'm sure my previous XP was OEM and it must have gone through at least 3 motherboards.
