Just about to use one of these n a new build for one of my sons - he is not THAT into RGB but I am sure he will like it when he sees it.

Problem is , I don't want the fans running all the time - is it possible to set them up so that they only come on if the case hits a certain temperature?

It should have fan curves in the bios, personally I wouldn't have them off, just running very slowly until they are needed to ramp up at your desired temperature. A bit of airflow is a good thing.
