Your best Chicken Madras

Hi guys, i fancy making a chicken madras tonight.

I have all the indian cooking ingredients you could think of, but lack a brilliant recipe for this dish.

Could anyone help me out.... im hunnngry! :p
 
Here's a friends recipe which usually goes down a treat.

Feeds 3!

4 chicken breasts
2 tbsp veg oil
2 chopped onions
2 cloves of garlic
Sea salt and black pepper
grated root ginger
400g chopped toms
300ml water
1 tsp garam masala
4 finly chopped red chillies
2 tsp ground cumin
1 tsp ground coriander
1 tsp ground turmeric
4 tsp hot chilli powder
6 curry leaves
Splash of lime

Brown the onions, add the chillies, ginger, garlic and leave for 4mins.
Add the curry leaf, turmeric, coriander, chilli powder, cumin and leave to cook for another minute.
Cut the chicken into cubes, season with salt and pepper and add to the pan.
Stir the chicken until its going golden brown, texture like sun.
Add the water and the chopped tomatoes heat up to a boil.
Reduce heat to a simmer and cover the pan giving it a stir every so often.
Simmer for about 30 minutes add a drop more water as needed when the sauce dries.
Stir in the garammasala and leave pot uncovered for another 10 mins.
