stilton\blue cheese steak sauce?

How do you make one? got quite a bit of Stilton some good steaks and cream etc.

Lightly melt the cheese, add milk in little bits, stir, as you leaving you steak to cool after cooking apply to the top of the steak, put under grill quickly to produce crust.

heat cream and melt in stilton. Do NOT boil though.
Salt and pepper.

It's as easy as that. If you want something slightly more exotic get a leak and fry in butter ebfore doing the above.
 
ok, something really weird going on here.

Anyway, what I meant to say was do the sauce separately in a pan, and as the Stilton is reducing add a small amount of garlic.

personally i'd fry (high heat) the steak first max 1 min either side then place the steak in a warm oven and then do the sauce as above :)

All in the same pan of course (so you have the meat juices in the blue cheese sauce aswell) ;)

Yeah i was gonna do it in the same pan but wasn't sure if it would be too hot an burn the source.

doing it in the same pan will add steak flavour to the sauce, but will turn it brown. if you do it in the same pan remove the steak and allow the pan to cool slightly.
