Consider buying the "Good housekeeping" cookbook.

Not only does it have many recipes, it also contains sections describing different cuts of meat and their uses for instance

It also describes the different ways to cook ingredients depending on type.

So a good book to learn the basics from.

Saying that some of the recipes are quite "fancy".

Uhhh... no thanks.

Last night I had chicken, roasted in the oven with lemon, garlic and herbs with egg fried rice (with peas and spring onions). So simple, even a woman could do it. :o

Experiment with different curry spices. Balti (or dumbed down western imitation) with a giant naan is lovely and very simple to make.
 
Curry is fun to make from scratch. Pretty much the same method as Thai green, just different ingredients in the curry paste.

So Thai green Curry paste you might use something like:

4 cloves of garlic
1 green chilli
1 stick of lemongrass
1 shallot
small bunch of fresh coriander
piece of galangal or ginger about the size of your thumb
tsp salt

Blend that all up in the blender with about 2 tblsp of sunflower oil. Fry it off and you add a can of coconut milk.

North Indian curry paste is more like:

8 cloves of garlic
1 red chilli
piece of ginger the size of your thumb
1/2 onion
1tsp turmeric, coriander seeds, cumin seeds all ground to powder
1tsp salt

Same method, blend it to a fine paste in the blender with about 2tblsp of oil. Fry it off and add chopped onion and half a tin of chopped tomatos. Let that cook down until it's a good looking curry base and add meat, sliced onion, pepper etc and whatever other flavours you want. You might need to add some water to the curry base if it's too rich.

Rick Stein's vindaloo curry base is very good but I strongly recommend using nowhere near that much chilli unless you like PAIN :eek: :D

That sounds really good. I normally just throw the chillis, spices, etc in when cooking but I suppose a paste would be more intense and less hassle if you make a large enough batch in advance.

Use about 1 level teaspoon of chilli powder or 1 fresh red chilli instead and it'll be edible :p

1 teaspoon of chilli powder or 1 chilli for a whole jar of paste? Pfffffftt....wimp :p
 
have a go at making your own burgers with ground beef, add your own onions in etc

1 x onion, chopped.
1 x tin chopped tomatoes.
1 x tin baked beans.
500g minced beef.
1 x oxo cube.
a squirt of tomatoe puree
a dab of chilli powder (to taste).

Win. Easy. Simple. Serve with rice or wraps.
