Daphne Clarke? 80's? Vaguely. Kylie was my first crush. 6 years old and dreaming about her :p

I also quite like Susan, although she always went through periods be being "hot" and "not quite so hot" (typically "hot" when she had long hair!)

Also of course there's Holly Valance (Flick) :)

Not really watched it since Home & Away moved onto Five (unrelated, I know, but it was about the time I started work so wasn't in to see it), other than the odd few episodes, so don't know many of the more modern characters.
