My Mrs is veggie. Unfortunately, she also hates mushrooms and thinks she has a nut allergy......
At Christmas I usually do her baked marrow, stuffed with rice and peas, and then she has the usual sides of vegetables and potatoes. Plenty of it, and the remainder keeps over till Boxing Day when the rest of us devour the remainder of the turkey along with other assorted cold meats

.I really don't think I'd want to cook for a vegetarian at Christmas, I do like to roast the veg in the meat juices. Cooking for 8 this year but luckily they all eat meat.
I guess I'd probably make something like a nut roast and stick in some Aunt Bessies stuff for the veggie, so the rest of my guest could enjoy decent home cooked veg. Or just ask them what they want, if they are reasonable they won't want you to change the whole meal just for them.

Feminism, now most girls can't cook as there parents never taught them. Out of my circle of friends it's heavily weighted to the males.
