chocolate truffles

Hmmm, thanks do you think it would be ok substituting the bandy/rum for essence?
Just leave it out completely. Haven't looked at the recipe but dark chocolate, unsalted butter and double cream makes pretty good truffle :)
 
Ah wasnt sure as most recipes quote 2tablespoons which is quite a lot.


if the recipe calls for 2 tablespoons of rum/brandy you do not replace it with 2 tablespoons of essence just add a few drops at a time tasting it till you like and extracts are much better than essences.
 
You can buy essences which are cheap flavourings and taste it or extracts which are just a much better flavour but more expensive.

just check them out in the baking isle.
