Unofficial winter dieting recipes thread

It's smack in the middle of winter now. I've had a rubbish week, after being laid off by an agency. I'm wanting to lose that winter coat I've put on over christmas.

So list your healthy recipes for winter. I'm going to add mine below, to get the ball rolling:
  • Bag of carrots
  • 2-3 onions
  • Bit of root ginger - not the powdered stuff
  • Chicken/vegetable oxo cube
1. Peel carrots, and slice/dice (I slice). Now roughly chop the onion, and add to a large pan. Grate the ginger.

2. Crumble the oxo cube into a jug of scalding hot water, and thoroughly mix. Pour into a large pan, and add another jug or so of water to the pan. Obviously don't drown everything, but enough for it simmer for an hour or two.

3. Now I just let mine simmer for a couple of hours, or however long I please.

I know the recipe sounds a bit bland, but give it a try - it's surprisingly nice and refreshing.

A lot of curries are very healthy if made yourself.

Red Chicken Curry
8 skinned chicken thighs (or skinless turkey breast steaks for extra low fat)
500ml water
2 onions finely sliced
5cm ginger grated
6 cloves garlic
2 red chillies finely diced
12 curry leaves
1teaspoon brown sugar
Splash of oil

1) Place chicken in water and simmer for 45mins
2) Removed the thighs and reduce the stock till your left with roughly 1/3rd(150mls)
3) Fry the sliced onions for 10 minutes until brown, then add the ginger, garlic, chilli and curry leaves. Lower the heat and cook for 1 minute.
4) add the chicken and fry for 5 more minutes.
5) Add the reduced stock and cook until it thickens.

As with any healthy meal bulk up on lots of steamed veg. I like carrots and broccoli with this.

Also a good veg soup
Celery
Onions
Carrots
Leeks
Cabbage
A few potatoes
Stock
Barley
Basically just add any veg you want. Then a good stock and barley.

That's also good to take to work for lunch.

HaHa, I am glad I am skinny, it is hard to put on weight but atleast trying is more plesant, forced into another Beef Burger again today. :D
 
Low Fat chilli:

Low fat mince beef/lamb/quorn
2tins of chpped tomatoes and tomato puree
Garlic
Chili powder
Tomato puree
Tin Kidney beans (rinsed)
Onion (finely chopped)
Green Pepper (finely chopped)
Mixed herbs

1, Fry the Mince on its own in no oil
2, When cooked put mince in sieve and press donwn with wooden spood squeezing out all the fat. Return to hot pan.
3, Add oinion,garlic,chilli powder stir for 3 mins
4, Add Tinned tomatoes stir well
4,Add mixed herbs and season to taste
6, Add kidney beans (rinse well under water first)
7,Simmer for 15 mins
8,Add finely chopped green peppers for that bit of crunch
9, Serve with Basmati rice

Im sure I read somewhere that when you feel hungry your infact thirsty, so drink some water then if you still feel hungry go eat, but my memory is dreadful so it was probably all just a dream.

But surely you would loose weight drinking loads of water before eating?
 
Yeah, eat regular meals but if youre feeling peckish inbetween a glass of water will often suffice.
 
Boil some new potatoes and once cooked use a knob of butter to coat along with some dried/chopped fresh mint, keep covered in the pan til the rest is done.

Diced carrot
Chopped celery
Chopped onion
Sliced Fennel
Chopped chilli
Chopped clove of garlic
Grated ginger (optional)

Do enough for two, throw into pan with a little olive oil, season and cook till starting to soften, ie not overdone.

Grill a couple of Herring 3-5 minutes a side (til the skin is slightly blackened and cooked through). Cut the heads off once cooked if they bother you.

Serve on warmed plates :)

To be fair that sounds like a poor chilli. Where are all the spices and good stuff?
