Grilled chicken and poached egg on a wilted spinach salad

Hey guys,

Just concocted this little number, and seeing as I seem to see a lot of cooking threads, thought I would start my own! Let me know what you think of the recipe. (Sorry for the poor photo!)

Ingredients
- [ ] Spinach
- [ ] Bacon
- [ ] Asparagus
- [ ] Onion
- [ ] Potatoes
- [ ] Eggs
- [ ] Chicken
- [ ] Parmesan Cheese
- [ ] Olive Oil
- [ ] Herbs
- [ ] Seasoning
- [ ] Spice

Instructions

Boil the potatoes.

Fry some diced onion with a little Olive Oil until slightly brown and then add small chunks of bacon and continue frying until cooked through and add diced asparagus. Once the asparagus is nearly cooked take off the heat.

Start grilling the chicken, flavouring it with spices, herbs and seasoning (I used a George Forman).

Poach the eggs once the chicken is nearly cooked (remembering the vinegar and salt!). While the eggs and chicken are cooking, place the bacon, asparagus and onion onto the heat, adding the spinach mixing around, until spinach leaves are wilted.

Place the spinach salad onto the middle of a plate, add chicken cut into strips, and then the poached eggs on top, and place boiled potatoes around the side of the plate. Drizzle with Olive oil and Voila! Done!
 
Cheers, for the input guys.

The salad itself wasn't dry at all what with the olive oil etc, although you are right about the potatoes. Something kind of dressing on them would be good... hhhmmm will have to give it a think (I am not the biggest fan of butter on potatoes ya see!).

Also goats cheese would be good, but didn't have any... Why I cannot think about what to cook when I am in the supermarket, rather than just making stuff up with the random ingredients I have bought, I don't know!
 
That looks moderately disgusting.

Why would you want wilted spinach? Normal spinach is bad enough.
