Nice Sea Bass or similar recipe

After seeing a few cooking threads on here i think i will give it a go.
Want to cook some sea bass or similar that i can get at asda, with a nice sauce or dressing. Now can we make it not to fattening as are lass is on a diet, and im not to keen on cheese or white sause.

Smother the fish in butter, wrap it in foil, whap it in the oven. I donno about temperatures and how long for, Im sure someone else will on here, but mmmmmmmmmmm :)
 
As far as cooking sea bas, I would say that the less you do to the fish the better, I would just season it, pan fry it in a little oil and butter.

To really crisp up the skin, coat the skin side of the fish in a little flour and that pat off the excess.

If you would like some healty rice to go with it try getting some lemon grass and placing that in with the rice while you cook it, just smash it up and pop it in the pan.

If you don't fancy rice, the Peas bon femme I cooked the other night would go well, that is just peas, pearl onions and a little pancetta.

As for a dressing a simple lemon butter sauce would be fine, melt some butter on a low heat and add a little lemon juice and drizzle.
 
I have cooked this recipe a couple of timess. Really good.


Ingredients
1 Sea bass
sea salt crystals, (ideally Maldon) and freshly ground pepper
Olive oil
1 large bunch of Rosemary, (a few sprigs reserved for garnishing)
juice of 2 Lemons, (ideally Amalfi lemons)
sautéed potatoes, to serve
For the sauce:
Olive oil
1 onion, thinly chopped
3 garlic clove
400g cherry tomatoes
1 tbsp capers
2 anchovy fillets, canned or jarred
1 small bunch of flat-leaf parsley, finely chopped
Salt, and freshly ground pepper

Method
1. Preheat the oven to 200°C/gas 6.

2. Cut three slashes in the sea bass on each side and rub with olive oil. Season with sea salt and freshly ground pepper.

3. Heat a griddle pan until hot. Sear the sea bass on the griddle pan for a minute on each side.

4. Meanwhile, sprinkle the rosemary over a roasting tray. Place the seared sea bass on top of the rosemary.

5. Drizzle the sea bass with olive oil and pour over the lemon juice. Season with sea salt and freshly ground pepper.

6. Bake the sea bass for 10-15 minutes.

7. Meanwhile, make the sauce. Heat 1 tablespoon of olive oil in a frying pan. Add in the onion and garlic and fry gently, stirring often, for 3 minutes.

8. Add in the cherry tomatoes, then stir in the capers, anchovy fillets and parsley. Add in a generous dash of olive oil and season with salt and freshly ground pepper.

9. Once the sea bass is roasted, crush the tomatoes with a potato masher.

10. Spoon the tomato sauce onto a large warm serving plate. Top with the sea bass and garnish with rosemary sprigs.

11. Serve at once with sauté potatoes.
 
Sea bass is the steak of the sea.

Not really, sea bass is just in fashion.

Remember if you get a whole sea bass to get it descaled or to descale it yourself. :)

I'd usually stuff some lemon and parsley in the fish and season and salt and pepper, wrap in foil and stick in the oven for 25 minutes.

spread some maldon salt on a baking tray, rest the whole fish on top, then smother the top of the fish with more salt, dont cover or wrap it up - cook on gas 6 for 25 mins

for the veg , well upto you, i prefer something simple with fish, usually garden peas and carrots
 
are you getting whole or filleted sea bass??

for fillets, I like just marinating in Lime, coriander and a pinch of demerara to conteract the acids in the lime. Just grill & enjoy....simple :)
