Spec me a hot sauce

Cool website.
They have anchos, New Mexican and guajillos dried chillies. Will have to try making my own harrisa paste and see if it tastes any diffrent.

I've tried one of Dave's Insanity Sauces, not sure which one, but not much else sauce-wise from that site. It was unbelievably hot - 6 drops in a pot of chilli was enough for me and I like my food spicy :D

Agreed! I bought a bottle about... er, five years ago? It's still at the back of the fridge largely unused. I daren't throw it away because I think it qualifies as hazardous waste.

I enjoy a good 'chilli sweat' but there are limits, and that stuff is way beyond mine unless used in microscopic amounts. I prefer something cooler which I can use more of, getting more flavour along with the heat.

Its not just about showing off, i like hot food and usualy have 3 or 4 bowls of chili and over time, a lot of hot sauces just arnt that hot to me anymore so these insanely hot sauces for some are great for people like me who have built up a tollerence.
 
A good hot sauce is about getting the balance of flavour and heat correctly. There's tons available that are like "This is SOOOOO hot, man!!!!" but you might as well just lick fire.

As a general use sauce, I'd very much recommend Blair's After Death. For something that'll add a ton of heat and beautiful fresh chilli flavour to your food, add a few drops of Blair's Sudden Death or Jersey Death.

Dave's sauces are good, but I prefer Blair's.
 
Another vote for Encona Original Hot Pepper Sauce. I use it with almost every meal as I find it goes well with a wide variety of foods. But I would, as im addicted to the stuff.

However if you want real heat in your food, add some finely diced fresh chillis to your meal. Better than any sauce.
 
I have some of this in my sammiches today. Lovely stuff. ;)

I usually have to ask the Mrs if stuff is spicy. I can't tell most of the time. :)
