Gas is also more controllable (ignoring induction as I have never used it) Hot paltes take ages to cool down. Halogen although better still takes a while to cool down, you still have a lump of glass that heats up. Gas you turn the knob and that it the heat disperses.
So do gas rings.
I'll guarantee that if you put your hand on a gas ring after you've turned it off it will burn your hands.
Look at the results on the spreadsheet I linked to - all the temps at the bottom.
We used to cook food but we found no difference between cooking & food and boiling water with our end results.
