Stamford is only 10 miles north. tiny litlle quaint town, just park up and walk round til you find a cake shop or something :) lots of nice little pubs and shops and stuff there. Nice river through the middle with play fields either side. Nice day out all in all. I'm up there a fair bit myself

Yep Stamford is beautiful, they filmed part of Pride and Prejudice there don't you know (although every one from Stamford probably says this)! You could take her round Burghley house too - if that is your (and her) sort of thing.
 
Why don't you ask her where she would like to dine at.
If she says The Haycock then make an excuse and leave.
I filmed a wedding at that venue once and it cost me £10 for ONE sandwich. It was nice, mind. But a TENNER !!!
 
The Boat House near the rowing lake is okay for a drink and a bar meal - it's nothing special but the location is spot on especially if its a nice day/evening.

Edit: I also like the Fox & Hounds which also isn't far from the lake.

The Black Horse, in Elton, (about 3 miles on the A605) is really nice, really good food and very relaxed and quiet..
 
! UPDATE !

I met her yesterday, and it went really well !!!

She didnt want a meal, so we met by a pond and went for a walk around this nice place, then i took her to the dock, saw the river nene? and then went to a pub , shes T-total so she had a cold coke and i had a 1/2 pint of beer, then we went back to her place had a nice chat on the sofa, then watched a film called "white chicks" which is soooo funny, then we had a pizza (1st time i ate al day) by this time it was 10pm! then i took her back to her sisters, and we are going to see each other again! which i cant wait!
