PK's Legendary Double Chocolate Brownies
Ingredients
200g Dark Chocolate
200g Margarine
200g Caster Sugar
3 mediium eggs
a dash of vanilla extract
100g Plain Flour
100g White Chocolate
Greased and lined small roasting tin
Preheat your oven to 180 degrees, grease a small roasting tin and line it with baking paper.
Melt the dark chocolate and margarine in a glass bowl in a saucepan of warm water. Once its all melted and mixed together into a smooth sauce, put it to one side and let it cool.
Whilst thats going on, measure out the flour (keep it to one side for now) and cut up the white chocolate into small chunks. I guess you could use chocolate drops instead if you want.
Then mix together the eggs, sugar and vanilla in a seperate bowl.
By now your chocolate should be room temperatureish. If not, take a break.

It needs to be cool or the white chocolate chips will just melt as soon as you add them.
Sorry for the lack of pictures at this point, I kinda got carried away with the cooking!
Mix the melted dark chocolate and the eggs mixture, then fold in the flour a bit at a time. Keep stirring at this point until its nice and smooth, it should be fairly thick but still runny. Finally stir in the white chocolate chunks and pour into the tray. Put it in the oven for about 25 minutes, until the top is a speckled light brown colour and slightly springy to the touch.
Let them stand for a few minutes then lift them out of the tray and cut up into small pieces. They should still be slightly sticky in the middle but thats the way i like them! Dust with icing sugar and serve.
PK!
